ULLJA KUNTZE AND THE LATEST ON HER LAWSUIT AGAINST 30 DEFENDANTS

LATEST ON ULLJA KUNTZE'S LAWSUIT AGAINST 30 DEFENDANTS:Update as of Oct 30th, 2010:

Out of jealousy and vindictiveness, beginning around May 2008 and continuing through the summer of 2009, Defendants filed numerous false complaints to various online selling venues in a desperate effort to have my shops removed from these online retail websites and to have my accounts and privileges terminated so i would be prevented from selling my products.
Defendants had knowledge of the agreements between me and the selling venues. Defendants are members of the same selling venues and therefore, they were aware of which of the sites' policies they could complain about so that my accounts would be shut down.
Though it took more effort than they were expecting, they eventually gathered enough people join their conspiracy and filed enough false complaints ultimately resulting in ALL of my accounts with these business sites being closed, causing me to lose ALL business sales.
Defendants willfully and intentionally induced the selling venues to cancel their agreements with me and to cancel my online selling venue shops by writing them constant and non-stop emails with lies about me and even threatend and boycotted as a large group to leave the selling venues themselves if the venues dont get 'rid of me'
This inducement of the defendants and their artisan community members, who are backing them up in this sabotage, resulted in these selling venues to wrongfully terminate my accounts, resulting in damages to me by depriving me of profits that i otherwise would have received had my seling accounts remained open...since 2008 Summer..thats over 2 years worth of lost profits from my very successful bead shop alone that they so desperately and maliciously wanted to get rid of so that customers would go shop with them instead...the extend their jealousy and their obsessiveness with me is unbelievable and is all on paper (supboened documents have arrived from the selling venues)
The desperation to get my selling shops terminated, includes even Defendants filing FALSE infringement claims with the selling venues in which they state: (I am quoting from the actual infringement claims they have filed and signed with their own names)
"I..., owner of ...., hereby file a written complaint, stating that seller ulljasbeads, has infringed upon my handmade lampwork beads, by purchasing them from me via the internet, and then without my knowledge and permission sold them in her internet sales shop"...they go further and claim "There is no doubt in my mind the beads are my work".....finally, the best part: they sign this false infringement claim stating: "I swear, under penalty of perjury, that the information in this notification is accurate, and that i am the copyright owner, and I am authorized to act on behalf of the owner, of an exclusive right that has been infringed upon. I have good faith belief that use of the copyrighted materials described above on the allegedly infringing seller is not authorized by myself, ....the copyright owner, its agent, or the law."

Defendants have filed AND signed with their own signature this FALSE infringement claim. During months of discovery process of my lawsuit, NONE of the Defendants has produced ANY copyright/trademark/patent OWNERSHIP DOCUMENTS for the beads they sold or are selling!!....but yet, they have signed a false infringement claim swearing under penalty of perjury that they are the copyright owners of the beads they sell...WOW!!
Everywhere, Defendants have written that i have stolen their intellectual property, that i am a Thief doing consumer fraud, and that i am a Fraud and run ALL my businesses fraudulently. Their sole purpose in doing this is to destroy my personal and professional reputation out of pure jealousy and vindictiveness. They have even managed to lure and convince with these lies many others to join them in their conspiracy.
In fact, one of the ring leader's motto is "The MORE, the MERRIER"....their constant and continuous efforts of convincing others, resulted in more and more people joining the conspiracy to sabotage any and all of my business pursuits and in destroying my professional and personal reputation.
Filing False infringement claims is just one thing they have done....but i wanted to mention that one today in detail.
I wonder if they even realize what kind of a deep, legal $$$HIT they have created for themselves out of this obsessive jealousy towards me and all my businesses??!!

Here is a quick tip to save on energy while cooking in the kitchen :
Did you know when you cover your pots while cooking that you actually save alot on energy. Cooking with the lid open is pretty much like trying to heat the room while your window is open in winter.

I know with some recipes you wont be able to save energy by covering the lid, however the best time would be while waiting for your pasta water to boil.

Happy Start to a wonderful Summer and I cant wait for 4th of July Holidays and Festive Cooking ideas when i will be doing some major long-awaited grilling while watching the beautiful fireworks that will happen in my town of Waco.

By the time you get up in the morning your body has gone through the longest period of the day without food. After a long period without eating, food is needed to restock on energy and nutrients.

Try to choose foods with nutritional resources to rebalance your body's needs as this can greatly influence how you feel for the rest of the day.

A mix of carbohydrates (found in foods such as wholegrains and bananas) with protein reduces the likelihood of sweet or carb gravings throughout the day.

Remember, skipping meals is always a bad idea, but starting off the right way with a good breakfast makes it easier to manage weight and keep energy levels consistent. Its also a great time to stock up on naturally occuring minerals and vitamins found in nutritionally dense foods such as dairy, seeds, nuts and fruit than reaching for the supplement bottle.

Also, dont forget to rehydrate, drink plenty of water to restore fluid levels in this Texas heat :-)

Ullja Kuntze, founder of Ulljas Gusto local food movement and multi-cultural chef, has been cooking asian cuisine this week. Teaching the wonders of Tofu with mouth-watering recipes..healthy, meat-free, Tofu is great for Vegetarians and for those who would like to consume less meat.
Tofu has been around for centuries and has become popular in the Western cultures in the 20th century but still as of today, there are many people who have never used it before nor are familiar with Tofu recipes.
In my opinion, the most important things to do with Tofu before using it in recipes is pressing and marinating.
After you drain, rinse and pat your tofu with a kitchen towel, wrap it with a clean tea towel and place it on a plate..cover with a heavy cutting board and place a heavy pan on top for 15min ...this "pressing" will make the tofu even firmer..now you are ready to marinate the Tofu block...i love using freshly grinded ginger and curry paste...delicious!
Did you know that Tofu contains essential amino acids, it's low in saturated fat, salt and carbohydrates and is cholesterol-free...Tofu-a great alternative source of protein.

Asparagus season is almost over, but you can still get it at the local farmers markets. The best time to eat Asparagus is when its in season, the taste is just so divine. Traditionally, Asparagus is eaten with Hollandaise sauce, but there are literally so many wonderful Asparagus recipes out there. Asparagus can be grilled, steamed, made into Asparagus souffle or Asparagus risotto.

As far as the nutrients in Asparagus, need i say that it is a wonder veggie? If you didnt know already, Asparagus is known to contain one of the highest amounts of Folic Acid (also known as Vitamin B9 that helps reduce heart attack/stroke among many other things), coupled with being a great source for Vitamin A and C, Fiber, Potassium (important for energy use) and molecules that help protect your body from chemicals that can cause cancer, Green Asparagus is a must to eat while fresh in Season.

As a part of our eating local, sustainable food movement in Waco-Texas, we are learing also how to read food labels and what things to watch out for.
One of the most abundant ingredient in both foods and drinks happens to be High Fructose Corn Syrup. Fructose in the food and drink products is mainly derived artificially from corn and it is called HFCS (high fructose corn syrup) and used as a sugar substitute as well as a preservative. Tablesugar which is made from either sugarcane or beets is made out of glucose and fructose.
So why is it that most of the processed foods, juices, deli meats, icecreams, candybars and even white and wheat breads, just to name only a few items with HFCS, have this HFCS (high fructose corn syrup) and not tablesugar (sucrose)??
What is the craze about lowering your Fructose/HFCS intake as much as possible? Consumers are speaking out in every corner of the nation against the HFCS use in food and drink products. Some food producing corporations have even started a new initiative to eliminate HFCS and substitute it with Sucrose, the Tablesugar.

We have discussed the issue of why high levels of Fructose is harmful to your health and the direct relation with obesity and heart disease in our Ullja's Gusto, local food movement and we will continue as a group to watch out the level of Fructose intake.

Ullja's Gusto Food movement Waco Texas, Eating Healthy and Sustainable with Stir-fry Recipes:
Ullja Kuntze, founder and chef of Ullja's Gusto Sustainable Food movement in Waco-Texas, has been teaching the community members to incorporate many easy-to-do, stir-fry recipes with fresh produce bought from local farmers in Waco-Texas. Eating sustainable, local fresh food has many advantages, including financial, economic, and most of all its the best way for ones health.

Here is an easy recipe using fresh, local produce from farmers:

Chicken Stir-fry made with zucchini, fresh green onions, mushrooms, and leeks...just cut them all, add a little extra virgin olive oil in your pan and start stirring them until all is cooked...stir-frying veggies is done quickly..make sure the chicken is well done (i usually stir-fry the chicken first and then add all the veggies...to season, i only use sea salt and freshly ground pepper...you can also add some freshly ground ginger to this or use some fresh chopped parsley.Try to stay away from ready-made seasonings and flavorings which are mostly filled with artificial chemicals and ingredients.

For Memorial Day weekend, i got some wonderful red beets from our local farmers and made some Italian Red Beet Risotto with Pinot Grigio White wine.The guest were so stunned at the color of the risotto and it fit my whole theme of red-white-and-blue.My Memorial day risotto was tried by various community members and it was a joy to read all the email this morning about how much fun it was to cook from sratch in the kitchen with the help of the kids with foods purchased by local growers here in Waco.

World Hunger Relief, which is a Christian Organization that is dedicated to the reducing hunger around the world, is partnering in our Waco community with various local organizations in order to educate and participate in the sustainable food cycle.Urban Gardening and community gardening has been prospering in the Waco Texas community due to this wonderful organization's mission and education. Many after school programs with school garden projects have been established with the partnership of the World Hunger Relief and the Heart of Texas Urban Gardening coalition. Schools and the kids of Waco are learning the importance of where food comes from and how its grown. Ullja’s Gusto Food movement in Waco visited today the Calvary Community Garden which has started in February of this year. This fantastic project is another jewel of Waco worth seeing and supporting. Community members and church-goers helping out spreading the word of this vegetable and fruit garden which is almost ready to harvest and which will eventually help out and contribute to local food banks, kitchens, restaurants, chefs and so much more.

Alot of my customers ask me for recipe and serving ideas. Here is a simple but very unique way for that special Mother's Day Breakfast:
Wash and slice some fresh strawberries, scoop out some cantaloupe using a melon scooper and place them next to the strawberries on a plate. Add a couple of my gourmet shortbread cookies to the plate. Toast a slice of bread or a scone and spread some nutella or Mom's favorite jam on it. Cut off the whole stem of a few flowers and add it to the plate and voila!
A perfect, colorful and different breakfast for Mom :-)

Happy Tax Day everyone! Ullja's Tax Service in Waco Texas has been very busy filing last-minute returns and extensions this week and I am happy to report, its all done for today.
Most of my clients already got their refunds, but for those last-minute filers, here is what you can do:
You can check out your status of refund information at www.irs.gov and click on "where's my refund" or call the IRS directly at 1-800-829-1954.
What records should you keep: normally, tax records should be kept for 3 years, but some documents such as records relating to home purchase/sale, investment transactions, IRAs and business or rental property, should be kept longer. Always keep copies of tax returns you filed along with all the copies of the tax forms.

If you move after you file your return, you must send Form 8822 (Change of Address) to the IRS.

If you think you made a mistake on your return (i.e. forgot to file a certain income, didnt file a 1099 form etc), you can file an Amended tax return called 1040X...Amended tax returns can be filed for up to 3 previous years.

Final Note: with the national deficit being very high, audits are in extreme rise and will be even more in the upcoming years..make sure you file all your income and file it correctly not to trigger an audit...remember, filing is a MUST,not an OPTION, according to the Internal Revenue Code of the United States of America.

Some things to know about making federal Tax payments:
1) Never send cash!
2) Did you know that if you e-file, you can file and pay in a single step by authorizing an electronic funds withrawal via tax preparation software or your tax professional.
3) You can also pay by phone or online using a credit/debit card and you can make payments 24 hours a day. Visit www.irs.gov and search e-pay for more details.
4) If you itemize, you might be able to deduct the convenience fee charged for paying individual income taxes with credit/debit card as a miscellenaneous itemized deduction on your Schedule A form. The deduction is subject to the %2 limit.
5) You should not staple your payment to your return when enclosing it.
6) If you pay by check/money order, make sure it is payable to the "United States Treasury"
7) Complete and include Form 1040-V, the payment voucher.
